Apple Crumble Muffins

A super easy small batch of Apple Crumble Muffins to ring in the fall season. This time of the year calls for us to slow down and appreciate the beauty of our surroundings.

These can be made with slightly cooked apples. This ensures that some moisture is pulled out of the apples.  You can use raw apples too if preferred.

Apple Crumble Muffins

Prep Time: 10 minutes

Cook Time: 18 minutes

Yields: 6

Ingredients

1 ¼ cup all purpose flour, spooned and leveled

¼ cup granulated sugar

½ tsp cinnamon

½ tsp baking soda

½ tsp baking powder

¼ tsp salt

¼ cup unsalted butter, melted and cooled

1 ¼ cup apples, diced

¼ cup vegetable oil

2 eggs, room temperature

¼ cup whole milk

1 tsp vanilla or almond extract

Crumble Topping 

⅓ cup all-purpose flour

3-5 tbsp unsalted butter, melted

¼ dark brown sugar

1 tbsp granulated sugar

1 tsp cinnamon

Directions

Preheat the oven to 375 degrees F

In a large bowl, combine the dry ingredients. In a separate bowl mix the wet ingredients using a whisk 

Add the wet ingredients into the dry ingredients then fold in the diced apples.

Scoop the batter evenly into lined muffin tins.

Use a small bowl and combine the ingredients for the crumble. Press the crumble into each muffin.

Bake the muffins for 15  - 20 minutes or until a toothpick inserted into the center comes out clean.
