Baked Chicken Suya

Suya is a Nigerian spice mix with a smoky and nutty flavor. I added red pepper flakes to bring even more heat to this #WinterChicken recipe. I know you’ll enjoy it as much as I do!

Cook Time: 35 minutes

Ingredients

3 Boneless, Skinless, Chicken Breasts

1 cup Roasted Ground Peanuts, unsalted

1 ½ tbsp Cayenne Pepper

2 tbsp Smoked Paprika

½ tbsp Ginger Powder

1 tsp Garlic Powder

1 ½ tbsp Onion Powder

2 tbsp Red Pepper Flakes, (optional for extra heat)

2 Maggi Cubes, or Knorr Bouillon Cubes, crushed

3 tbsp Olive Oil

1 tsp Salt

Directions

  1. Preheat the oven to 350°F.

  2. Place all ingredients into a food processor and blend into a powder about 4 -5 pulses.

  3. Rub olive oil over each chicken breast, then generously cover each side of the chicken breasts with suya spice mix.

  4. Transfer each breast to a non-stick oven safe baking dish or pan.

  5. Bake for 30 - 35 minutes until internal temperature reaches 165°F (75°C).

  6. Remove from the oven and allow to cool before serving. Top chicken with a few sprinkles of suya spice mix. 

Note: Transfer the suya spice mix into an airtight container; store in a cool and dry environment. You can also marinate the chicken breast overnight before baking.
